Ginger thovayal / Ginger pickle

     Ginger is loaded with nutrients and bioactive compounds that have powerful benefits for your body and brain.
   
     Ginger thovayal is the best side dish and suits for all dishes.
     
     NOTE: Young ginger is preferred because it has less fiber and easy to grind.



INGREDIENTS
    
Ginger                   - 300 grams
Roasted Red chili  - 12
Salt                        - As required
Oil                          - 2 Tablespoon
Tamarind               - A lemon size
Water                    - 100 ml
Jaggery                 - Little(for sweetness)

PRE-PREPARATION

# Soak Tamarind in water.


# Drain it using strainer.

METHOD

1. Wash and peel the ginger skin and make it dry for an hour.

2. Cut it into very tiny pieces.

3. Take oil in a thick bottomed pan and roast the ginger well.

4. In a mixer jar, take Roasted red chili, roasted ginger with salt and grind well.




5. Again in a mixer jar, Take Tamarind and grinded ginger paste and grind well.

6. Add salt(preservative) and jaggery and grind until it gets into smooth texture.



7.Take ginger thovayal in a pan and cook well for few minutes.

8. When the color changes, turn off the stove.

9. Store the ginger thovayal in a dry container.
