Coconut Cake / Double layered coconut cake / Beetroot coconut cake

      Coconut are rich in copper and iron, which help form red blood cells, as well as selenium, an important antioxidant that protects your cells.

     Beetroots get their rich color from betalains, which are water soluble antioxidants. Betalains have chemo preventive abilities against some cancer cell lines.

     Desiccated coconut is suitable for this recipe...


INGREDIENTS

Layer 1

Desiccated coconut -1/2 cup
Ghee                       - 1 spoon
Sugar                      - 2 Tablespoon
Cardamon powder - A pinch


Layer 2

Ghee                      - 1 spoon
Beetroot paste       - 2 Tablespoon
Cardamon powder - A pinch
Sugar                     - 2 Tablespoon
Desiccated coconut-1/2 cup

METHOD

Layer - 1

1. Add ghee on hot pan.

2. Put desiccated coconut.


3. Roast well.


4. Add sugar.



5.Add cardamon powder.

6. Cook well until sugar melts and it becomes thick consistency.



7. Keep aside and make a layer.

Layer - 2

8. Add ghee on hot pan.


9. Put beetroot paste.


10.Cook well.


11. Add cardamon powder.


12. Add sugar.


13. Mix well.




14. Add desiccated coconut.


15. Cook well until it becomes a thick consistency.


16. Place that mixture on top of first layer.


17. Make double layered cake.



18. Garnish with cashews on top of the cake.


19. Make pieces.


20. Serve.
