Brinjal Chutney

     The high fiber content in brinjal, which is a crucial element to maintaining a balanced diet, is a great way to improve your gastrointestinal health.




INGREDIENTS

Brinjal - 2

Onion - 1

Green chili - 4

Ginger - An inch size

Coriander leaves - 1 Handful

Salt - Required

Water - Required

Oil - 2 Spoon

Mustard seeds - A pinch

Urad dal - 1 Spoon


METHOD


1. Heat the pan and add 1 spoon of oil. Put chopped onions and green chilies and saute well.




2. Keep aside and make it cool.


3. On the same pan add chopped brinjal and ginger and saute well.


4. Keep aside and make it cool.


5. Put all cooked items in a mixer jar with salt and coriander leaves and grind.


6. Add little water if needed.


7. Grind well and transfer into a bowl.


8. Add Oil in a heat tawa. Add Mustard seeds and urad dal. Allow mustard seeds to crackle.



9. Put it on brinjal chutney and mix well.
